Vegan life just isn't complete without some of your ole time favorites, so I am back with another banger, and this time, I am going to show you how to make the easiest vegan coleslaw that will rival the non vegan versions! I could eat this stuff by itself all day long because that's just how good it is, but it pairs perfectly with my Vegan BBQ Pulled Pork Sandwiches and I just made some last night, so without further ado, let's get into it!
• 3 cups of shredded cabbage mix • ½ of a ripe avocado (can use 1/4 to 1/2 cup of vegan mayo as a substitute) • 6 Tablespoons of white distilled vinegar • 3-4 tablespoons of agave syrup or other sweetener of choice • 1 small onion • Salt to taste
1. Add cabbage mix to a medium sized mixing bowl 2. Chop your onion and add it to the mixing bowl 3. Cut your avocado in half, and scoop the contents of 1 half of the avocado into the mixing bowl 4. Add distilled vinegar and sweetener of choice to mixing bowl and mix thoroughly until all ingredients are well mixed. If mixture is not wet enough, feel free to add a little water. 5. Season to taste with salt and serve immediately or cover with a lid and let chill for 2 hours before serving.
